This merger with the Lesimple laboratory creates a new, stronger team, with complementary experiences, and an even greater presence in the field.

Vincent Bartement
Graduating as an oenologist from the University of Dijon in 2001, Vincent began his career in the Bordeaux region, then went on to make wine in Chile and Alsace. In 2005, he decided to return to Burgundy, where he became oenologist at the Viré Cooperative in the Maconnais region, then at La Chablisienne from 2011.
A field oenologist, he has been awarded the IWC title of "Winemaker of the year" on numerous occasions. In 2022, he joined the BURGUNDIA ŒNOLOGIE team of oenologists, and took charge of the Chablis laboratory.

Marine Thouvenot
After obtaining a BTS in viticulture-oenology in Beaune, Marine decided to continue her studies in Switzerland in 2019. In 2022, she graduated as a viticulture-oenology engineer and oenologist from Changins.
She was fascinated by production work and the diversity of grape varieties in Switzerland, but then she met Kyriakos and discovered the Chablis laboratory project. Seduced by the opportunity to work as a consultant oenologist, Marine returned to Burgundy and joined BURGUNDIA ŒNOLOGIE in August 2022.

Patrick Caro
With a degree in biology in 1993, Patrick joined the LESIMPLE laboratory in 1995 to carry out routine analyses. In 1997, he specializes in oenological analysis and obtains his diploma of oenology technician.
Patrick follows the evolution of the laboratory during its merger with Burgundia Œnologie in 2021, and participates, in addition to his functions of analyst, in the development of new analytical techniques.

Sandrine Masure
After graduating with a DUT in Chemistry in 2000, Sandrine begans her career in a water analysis laboratory. After many years, she left the analytical field to become a town hall secretary.
A perfect match for the multi-skilled profile required by the laboratory, Sandrine joined BURGUNDIA ŒNOLOGIE at the beginning of 2023, where she is in charge of customer reception, secretarial work and accounting, as well as helping to carry out analyses during the grape harvest.

Our story

In 1992, Jacques Lesimple created the first oenological laboratory in Chablis in order to keep pace with a rapidly expandive vineyard and in search of quality improvements. After more than thirty years at the side of Yonne winegrowers, Jacques is thinking of handing over the laboratory, wishing to rely on a more dynamic and ambitious structure in order to pursue and extend his influence on the Chablis vineyards. And so, in June 2021, LESIMPLE Laboratory joined forces with BURGUNDIA OENOLOGIE, already a leader in Burgundy and renowned for its services in France and others countries.

This association offers Chablis a more complete analytical service, as well as modern and innovative technical tools. To cope with this development, a new laboratory was built in August 2023. Much more spacious and perfectly equipped, it's a workplace that welcomes winemakers in the best possible conditions. Our aim is to support you throughout the winemaking process, from harvest to bottling. Our ambition is to help you reveal the authenticity of your terroirs through your wines.
