Adding FERM'UP to the harvest creates favorable conditions for a complete alcoholic fermentation, thanks to the presence of thiamine, an essential growth factor for yeasts, and ammonium sulfate, a basic nutrient that can be directly assimilated by yeasts.
FERM'UP also avoids the risk of reduction: copper sulfate complexes with the H₂S formed by the yeasts during alcoholic fermentation. The addition of 20 g/hL of FERM'UP is equivalent to the enrichment of 0.2 mg/L of copper (Cu).
