EXELCIA
AUTOLYSIS E.C.F. contains pectinase and ẞ-glucanase activities. Used at the end of alcoholic fermentations, or during maturation, it participates in yeast autolysis for better colloidal stability, more roundness and volume in the mouth. It helps to clarify wines, reducing the microbial load and facilitating the filterability of wines (particularly in the case of contamination by Botritys cinerea).
